The interview is fascinating. Fadi Kattan's restaurant "Fawda" sounds so refreshing by grabing the local ingredients daily and randomly. The way he described the dried molokhiya made my mouth watery 😅

The ingredients measured by the old women "kamsha," "hafna," and "rasha" will remain غصبن عنهم 👌💪.

Yes, it kinds of reminds me of how we cook at home, we see what ingredients we have and then decide what to cook, it is cool to have a restaurant cooking with fresh ingredients and having a new menu everyday.
